Red Velvet Whoopie Pies

HAPPY VALENTINES DAY!!!!! 

Let's make Whoopie...........PIES!!!

This simple dessert comes from the great  Betty Crocker but instead of marshmallow filling I made cream cheese frosting!!! Mmmmm. ️SHARE with the sweeties in your life and Enjoy!!!

INGREDIENTS:

1 box Betty Crocker Devils food cake 

1/2 cup water

1/2 cup veg. oil

3 eggs

tablespoons red food color

1 box (4 oz serving size) chocolate instant pudding and pie filling mix

FILLING:

1 cup butter, softened 

12 oz cream cheese, softened 

4 tsp vanilla 

4 cups confectioners sugar

DIRECTIONS: 

1. Heat oven to 350°F. Line cookie sheets with cooking parchment paper or lightly spray with cooking spray.

2. In large bowl, beat cookie ingredients with electric mixer on low speed until moistened; beat 1 minute longer on high speed. Drop batter by 1/4 cupfuls 2 inches apart onto cookie sheets.

3. Bake 13 to 16 minutes or until set (do not overbake). Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.

4.  Put butter into a bowl and beat with cream cheese and vanilla extract with an electric mixer until mixture is nearly fluffy, about 5 minutes. Gradually stir confectioners' sugar into cream cheese mixture to make a smooth frosting

5. Fill the centers and top with the other cookie.

Chocolate espresso rubbed ribeye

4 bone in 2" thick ribeye steaks
2 tablespoons freshly ground dark espresso 
2 tablespoon kosher salt
2 tablespoons paprika
1 tablespoon ground mustard powder
1 tablespoon ancho chile powder
1 tablespoon dark brown sugar
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground black pepper
1/2 teaspoon coco powder
1/2 teaspoon coriander
Olive oil

Bring your steaks to room temperature. Meanwhile mix all seasons together. Rub olive oil on the steaks then sprinkle with a generous amount of rub on the steaks and rub it into the steaks. Cover and put back in the fridge for at least 2-3 hours. When ready to grill let the meat come to room temperature before grilling. 9 minutes one side 8 on other for medium rare, 10/8 mins medium and 13/11 mins well done. Let meat rest for 5 mins.

Chocolate chip bread pudding

I always pass by the clearance grocery area in Walmart to see what i can scoop up for cheap. And today when I went shopping I passed by and saw a mound literally of French bread that was no longer fresh. And any true southerner sees day old French bread and automatically thinks of bread pudding....what you don't, well I should restate that the fat southern girl inside of me screamed "I need bread pudding" so I had to feed her. So here's a southern staple done with a chocolates twist!!!! Enjoy.....and Eat on!!! 

INGREDIENTS:

2 cups sugar
1 tblsp allspice
1 tblsp nutmeg
1 tblsp cinnamon
2 cups milk
2 tsp vanilla
5 large eggs, beaten
1/2 stick butter
1 cup of chopped pecans
1 cup of semi sweet chocolate chips
4 cups old French bread(not moldy...lol) 

Rum sauce 

1 tblsp butter
2 tsp cornstarch
1/3 cup brown sugar
3/4 cup milk
1 tblsp rum extract(you could substitute real rum if you wanted but since we don't drink extract will do) 

DIRECTIONS

Preheat oven 350 degrees. Cube or tear your bread and set aside. Combine sugar, allspice, nutmeg and cinnamon into a separate bowl. In another bowl combine milk, vanilla eggs and butter. Add this mixture to dry mix. Whisk until smooth. Add bread into the bowl and toss to make sure all bread pieces are covered. Next add pecans and chocolate chips. Pour into a buttered 9"x13" pan. Top with extra pecans and chocolate chips. Bake for 50-60 mins or until golden brown.

RUM SAUCE DIRECTIONS

Combine cornstarch and brown sugar in a bowl. Melt butter in a medium saucepan. Once melted add cornstarch brown sugar mix. Add milk and stir until thick. Keep stirring. If you are adding rum extract add now. If you're using alcohol REMOVE FROM HEAT before adding rum. 

Serve warm on top of bread pudding!!! Enjoy!!!

Oreo Cheesecake Truffles

HAPPY FATHERS DAY!!!! My husband loves sweets so I made this dessert with him in mind. I know that he is trying hard to watch what he eats BUT c'mon it's FATHERS DAY he deserves the treat. Since I know that he is trying hard I used fat free Oreos and Greek yogurt cream cheese which is half the fat then normal cream cheese!!! Enjoy......and Eat on!!

Ingredients:

1 pkg. Cream Cheese, softened. I used Greek cream cheese. 
1 pack of OREO Cookies. 
16oz BAKER'S Semi-Sweet Chocolate, melted....you can even melt in microwave. Follow the instructions on box.  

Directions: 

1. Process all your cookies either in your food processor or a blender until fine crumbs. 
2. Mix cream cheese and cookie crumbs until blended. 
2. Shape into balls. 
3. Freeze 10 mins or until hard. 
4. Dip balls in melted chocolate; place them on a wax paper covered pan. 
5. Refrigerate 1 hour or until set.
