Banana Wheat Bread

My husband is a banana bread lover but with us trying hard to stay away from bad oils, fats and carbs he was starting to go into banana bread withdrawals soooo I decided to try to make him a healthy banana bread.....here it is. Enjoy.....and eat on!!!

Ingredients:

1/3 c applesauce(no sugar added natural)
1/2 c honey
1 tsp vanilla
2 egg whites
1 1/4 c mashed bananas
1 3/4 c while wheat flour
1/2 tsp Salt
1 tsp baking soda
1/4 c hot water
1/2 c nuts(optional)
Directions

Preheat oven to 325 degrees.
In a large bowl, beat applesauce and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into a greased 9x5 inch loaf pan. Bake for 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.








Shrimp Creole(crock pot)

Ok so being raised in Louisiana opens your life up to sooooo many chances to have great seafood!!! I love shrimp creole but I wanted to be able to cook it and well with 3 children also keep my hands free to you know......"keep an eye on them"!!! So here you go friends...AND it's delicious and 70 calories!!!! Enjoy and....eat on!!

Ingredients
4 tablespoons olive oil
1 cup diced green bell peppers
1 cup diced onions
1 cup diced celery
2 teaspoons chili powder
2 (14-ounces) can tomatoes
2 (8-ounce) can tomato sauce
2 tablespoons hot sauce
2 tablespoons Worcestershire sauce
2 teaspoons white sugar
Salt and pepper
3 pounds peeled and deveined shrimp

Directions:

Preheat crock pot on high.
In fry pan, heat olive oil. Add peppers, onions and celery. Cook until softened. Add chili powder and saute until caramelized. Remove from heat and pour into crock pot. Add tomatoes, tomato sauce, hot sauce, Worcestershire, white sugar, salt and pepper.
Cook for 3 hours. Add shrimp and cook for about 3 minutes. Serve over rice or like we do eat as soup and "mop" it up with fresh French bread!!!
